What does Chitosan actually do?

Chitosan is extracted from the shells of crustaceans, such as shrimp and crab. Chitosan is not digestible but may have beneficial effects on the gastrointestinal tract. Chitosan appears to reduce the absorption of bile acids or cholesterol. Chitosan, as a dietary fiber, forms viscous solutions or gels in the stomach and small intestine [and] may also act to slow absorption and transit by increasing the viscosity of lamina contents.
